Carrot Cake (Gluten Free, no Sugar, Vegan)

Sweet Cravings?

Nothing to worry about!! You can still eat and enjoy some delicious cake. With no sugar, gluten free and vegan.

For the Cake:

2 Cups of Almond Flour

1/2 Cup of Flax Meal

2 Chia "egg" or Flax meal "egg" (Or any other egg replacement)

2 tablespoons of Cinnamon

1 cup of Pecans (Cut in pieces) 1/2 for the cake and 1/2 for decoration

1/4 cup of Coconut Oil

1 tablespoon of Vanilla Extract

3/4 cup of Erythritol or any other healthy sweetener

2 1/2 cups of shredded carrots (1/2 cup for decoration)

2 tablespoons of Baking Powder

1/2 tablespoon of Salt

Buttercream for Decoration

For the Buttercream

1 bar of plant based Butter (You can make it yourself, I'll share a recipe soon)

1/2 tablespoon of Vanilla Extract

1 Cup of Erythritol

1 to 4 tablespoons of Coconut or Almond Milk

1. Preheat the oven at 350 F

2. Mix the wet ingredients in a bowl

3. Mix the dry ingredients in a bowl

4. Mix them all together until smooth

5. Use parchment paper or coconut oil for the baking pan

6. Bake for 30 to 35 minutes

7. Take it out of the oven and wait until it's cold enough to start decorating

8. Add the buttercream, the rest of the Pecans and shredded Carrots
